This year Mother’s Day is on Sunday May 13 and Sunny Queen Farms has the perfect step-by-step guide of activities you and your Mum can enjoy, with some delicious Sunny Queen Free Range inspired treats to whisk up at home that we know she’ll love!





Five easy ways to treat your Mum on this egg-stra special day:

 

  1. Make her breakfast

Let your Mum relax as soon as she wakes up and treat her with a cracking breakfast cooked from the heart like poached eggs, whether it be in bed or with the family. See below for some other scrumptious, easy-to-make breakfast options from Sunny Queen Farms that will have Mum saying yum!

Most Mums enjoy a bit of space, so make sure when cooking your Mother’s Day feast to use Sunny Queen Free Range eggs laid by hens who enjoy six times more space than the national Free Range Standard, to roam and play.


  1. Pamper her with an at-home spa experience

No matter how you plan to celebrate Mother’s Day, we have some scrumptious recipes made with our Sunny Queen Free Range eggs to spoil her from dawn to dusk.





Bacon and Pumpkin Fritters

Ingredients

  • 250 grams pumpkin, grated

  • 150 grams bacon, (about 5 rashers) finely chopped

  • 2 Sunny Queen Free Range eggs

  • 50 grams fresh breadcrumbs

  • 1/4 cup parmesan, grated

  • 1 small handful pine nuts, roughly chopped

  • salt and pepper, for seasoning

  • olive oil, for frying

 

Method

Step 1: In a large bowl, combine the pumpkin, bacon, eggs, bread crumbs, Parmesan, pine nuts and salt and pepper and combine really well with a spatula.

Step 2: Line a baking tray with baking paper.

Step 3: With your hands, make small walnut-size balls, then gently press down on them to make small patties. Refrigerate for 1 hour.

Step 4: Heat oil in a large frying pan over medium heat. In batches cook the fritters for 5 minutes on each side. Drain on paper towelling and serve.

 

Portuguese Tarts

Ingredients

  • 2 Sunny Queen Free Range eggs

  • Vegetable oil/butter, for greasing

  • 375 grams puff pastry, pre-rolled

  • 1 teaspoon caster sugar, for pastry

  • 150 grams caster sugar, for filling

  • 1/2 teaspoon cinnamon, ground

  • 1/2 teaspoon cornflour

  • 1/2 lemon, juiced

  • 200 grams crème fraiche

  • 1 teaspoon vanilla extract

  • icing sugar, for dusting

 

Method

Step 1: Preheat the oven to 220°C fan-forced or 240C conventional. Grease or spray a medium-sized muffin tin.

Step 2: Lay the pastry out on the bench and evenly scatter over the sugar and cinnamon. Press the sugar and cinnamon into the pastry with a rolling pin, stretching out the pastry a little in the process. Roll up like a Swiss roll, neatening the ends by pushing them in a little as necessary. Cut the roll into 14 even pieces.

Step 3: Flatten each pastry disc out in the palm of your hand with your fingers until about 3mm thick. Press the pastry into the prepared muffin moulds and chill for 20 minutes.

Step 4: For the filling, add the cornflour and lemon juice to a small bowl and mix until combined.

Step 5: Add the remaining filling ingredients to a large bowl and whisk in the cornflour slurry until combined and smooth.

Step 6: Divide the filling between the tart shells and cook for 20 minutes, increasing the oven to 250C fan-forced or 270C conventional for the last five minutes. Dust with a little icing sugar to serve.

 

Zucchini Slice

Ingredients

  • 5 Sunny Queen Free Range eggs

  • 1 brown onion, finely chopped

  • 1 cup cheddar cheese, grated

  • 150 grams self-raising flour

  • 375 grams zucchini, grated

  • 200 grams bacon, rinds removed, finely chopped

  • 1/4 cup vegetable oil

 

Method

Step 1: Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan.

Step 2: Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Pour into the prepared lined metal or heat proof tray/pan and bake in oven for 30 minutes or until cooked through.

Step 3: Serve warm or cold as an excellent meal or side dish anytime. Great for school lunch boxes and picnics.
